Bimi Bistro a classic Tonkotsu Ramen Noodle Shop owned and run by the Chen Brothers, has opened on Aug 8, 2022 at Jefferson Pointe Shopping Center. Our founder spent 3 years working and training in Tokyo Japan, bringing the authenticity and delicacy of the Ramen craft all the way from Tokyo Japan to Fort Wayne, Indiana. In order to create the best Tonkotsu soup, we spent 8 hours to simmer pork bones and 20 other ingredients every single day. This process extracts all the goodness of the pork bone and turns the broth creamy white. Tonkotsu Ramen is the king of Japenese soups for a reason. The deeply flavourful broth is in perfect balance with the Chashu (Japanese Braised Pork Belly), Beef, or Chicken, and those wonderful ramen noodles. Take one bite and you will be hooked.
